We switch most of our patients from consuming cow dairy to sheep or goat milk products instead. Why?
It’s all about the proteins. There are 2 types, A1 and A2, of beta casein (the main protein found in milk). A1 is the predominant protein found in cow’s milk today. Research has shown this protein is the main factor contributing to gut inflammation! In contrast, A2 not only doesn’t cause the same inflammation, but it also up-regulates the body’s production of glutathione, our most abundant antioxidant produced by the body itself! A much more healthful choice. So consider making the switch to goat cheese, buffalo mozzarella or sheep cheeses such as Manchego (tastes like provolone) & Pecorino Romano (tastes like parmesan).
